  1.                        CHEESECAKE SQUARES

  4. 1 c. graham cracker crumbs
  5. 1 c. sugar, divided
  6. 3 T. melted butter
  7. 16 oz. smooth cottage cheese
  8. 8 oz. cream cheese
  9. 3 eggs
  10. 1-1/4 c. sour cream or sour 1/2 and 1/2
  11. 1 t. vanilla
  12.  
  13.           Mix together crumbs with 2 T. sugar and butter.  Press
  14. into 9-inch pan.  Bake at 350 degrees for 10 minutes.  Reduce to
  15. 300 degrees and remove.  Blend cottage cheese in blender.  Mix
  16. cheese, cream cheese, and 3/4 c. sugar with mixer.  Add eggs one
  17. at a time.  Pour over crust and bake 45 minutes.  Mix sour cream
  18. with remaining 2 T. sugar and vanilla.  Spread over cheesecake
  19. and bake 10 more minutes.  Cool completely.  Bakes 12 servings.
